Daniel Boulud selects Sebastien Silvestri as chief executive, Dinex Group

First-ever company CEO will propel Dinex into future with new brands, acquisitions

Daniel Boulud has selected a new CEO for The Dinex Group. Sebastien Silvestri has a deep expertise in hospitality going back 25 years. Now, he takes the role of The Dinex Group chief executive—the restaurant company’s first. It is also tasking Silvestri with developing marketing strategy, building partnerships, branding, and propelling The Dinex Group into the future. He’ll accomplish these through expanding Dinex’s brands and via strategic acquisitions.

Previously, Silvestri served as chief operating officer of Disruptive Group, which is a division of sbe. There, he oversaw the food operations of culinary concepts, its nightlife venues and Umami Burger. Prior to sbe, Silvestri held the role of vice president, Food & Beverage. at The Venetian and The Palazzo Casino Hotel and Resort in Las Vegas. His work in Las Vegas ramped up his career while introducing him to acclaimed chefs, including Thomas Keller, Wolfgang Puck, Charlie Trotter, Emeril Lagasse and Daniel Boulud.

In a company statement, Boulud said, “…the time was right to engage the expertise of a veteran industry executive to help both fuel and manage our growth, as well as to ensure the level of excellence within our existing operation. Sebastien has a tremendous track record for assisting some of the most revered hospitality businesses’ experience remarkable growth, and I could not be more thrilled to have him by my side as we begin an exciting new era of Daniel Boulud restaurants.”

Currently, The Dinex Group is working on a new concept and a fourth Épicerie Boulud both at One Vanderbilt, opening Fall 2020, according to Boulud. There are 19 locations globally and an expanding catering business. Thus, the management team decided the timing was right for a leader to “both fuel and manage our (Dinex Group) growth.”

Boulud and Silvestri are also friends and admire each other’s accomplishments. The Dinex Group manages and licenses 19 locations around the world. The portfolio includes notable hospitality operations, including Daniel in New York City; Café Boulud at The Surrey in New York City, Brazilian Court Hotel in Palm Beach and Four Seasons Hotel in Toronto; and Maison Boulud at the Ritz Carlton in Montreal.
