Chicken Salad Chick promotes five executives amid double-digit unit growth
Promotions follow impressive 2019, Brentwood acquisition
As Chicken Salad Chick continues to grow its fast-casual franchise, the restaurant company promoted five executives. This includes Jim Thompson as COO, Terry McKee as chief development officer, Tom Carr as chief marketing officer, Mary Lou Atkins as VP of Human Resources, and Carrie Evans as VP of Franchise Development.
Chicken Salad Chick has seen impressive expansion since 2016, growing four-fold. Also, It opened 40 new restaurants in 2019, a year in which Brentwood Associates acquired the fast casual from Eagle Merchant Partners.

Thompson has been with the company since 2013. As a certified franchise executive, he helped grow Chicken Salad Chick to 160 units. Plus, Thompson built out the chain’s operations and training programs, earning him the promotion to chief operating officer.
McKee receives much credit for the expansion of the Chicken Salad Chick chain throughout the Southeast, Midwest and Texas. He previously served as VP of Real Estate and Store Development starting in 2015. He’s versed in the processes of successful site acquisition and new store development. As CDO, McKee will continue to expand the chain’s franchised and company locations.
Carr started at the Auburn, Ala.-based fast casual in 2016, heading up the Marketing group. He has been key in promoting the brand to increase new trial and sales growth. According to a statement. Carr’s tenure has seen a 31.8-percent increase in average unit volume and 140-percent increase in new units.
Evans, who was promoted to VP of Franchise Development, has worked at Chicken Salad Chick since 2016, joining as director of Franchise Development. She’s been central in supporting the chain’s growth, with the signing of 26 new franchise agreements in 2019. Evans previously worked for several restaurant brands, including MOOYAH Burgers, Fries & Shakes and Cicis Pizza.
Over four decades in the restaurant industry, Atkins has developed an expertise in talent and performance management and employee relations. Her role as VP of Human Resources will further her impact on the organization. Atkins joined Chicken Salad Chick in 2019 as Human Resource director, having previously worked at Popeyes for 35 years.
“Despite all that we’ve faced over the past several months, these individuals championed our brand and continued to propel it forward, so it was important for me to recognize all their contributions and provide them with the opportunity to continue to grow within our organization,” said Scott Deviney, CEO of Chicken Salad Chick.
