Just Salad rolls out limited-time, Spanish-inspired Catalan Salad, raising funds for non-profit RAICES

Culinary collaboration with Boqueria features Machengo cheese

Just Salad partnered with Barcelona-style tapas bar Boqueria to launch The Catalan, a new Spanish-inspired salad, which is available through October 23. The new, limited-time offer (LTO) menu item helps raise funds for RAICES, the Refugee and Immigrant Center for Education and Legal Services. The non-profit agency promotes justice through free- and low-cost services to underserved immigrants.

Team members prepare The Catalan with a kale and red cabbage base, combining broccoli and cauliflower rice. Then they top it with antibiotic-free grilled chicken, roasted almonds, dried cranberries, and new Manchego cheese, optionally dressed with a seasonal, maple cider vinaigrette. Just Salad will donate 10 percent of sales of the online- and delivery-only LTO to RAICES.

Fast-casual chains have been adopting sustainability and community-forward efforts as consumers have increasingly come to demand them. According to a “2020 Food and Healthy Survey” by the International Food Industry Council, 60 percent of consumers consider it important that the food they purchase and consume is produced in an environmentally-friendly fashion.

Just Salad continues to work toward socially- and environmentally-friendly initiatives, including a recently-launched Climatarian Menu and implementing carbon labeling for its entire menu, according to an announcement.


During the COVID-19 pandemic, the New York City-based salad chain donated 10,000 meals weekly and over $1M-worth of food to Mount Sinai hospitals; the restaurant industry continues to prepare, and often donate food, to first-responders, food banks, physicians, schools, and many other community-based organizations, showing solidarity with local heroes and those impacted by the health crisis.
