Rubio’s Coastal Grill adds plant-based Impossible seasoned meat to menu

Three featured dishes added to spotlight Impossible protein

Rubio’s Coastal Grill rolled out Impossible seasoned meat as a plant-based menu option for a limited time. The fast-casual chain will debut the protein on the new Impossible Taco Salad, Burrito Especial, California Bowl, and as a substitute for chicken and steak on entrees. There are a growing number of consumers incorporating plant-based food and drink into their diets and limited-service chains have been responding.

From a nutritional standpoint, Impossible seasoned ground meat has the same amount of protein as 80/20 ground beef and contains no animal hormones or antibiotics. In addition the plant-based protein comes certified kosher, halal and gluten-free, according to the Carlsbad, Calif.-based Mexican-style chain.

“We are using a signature blend of Mexican spices unique to Rubio’s in our Impossible Foods menu items,” said Ralph Rubio, Rubio’s co-founder. “It pairs perfectly with our coastal-inspired flavors and expands our protein options. It is also more sustainable by using a small fraction of land, water and energy, when compared to 80/20 ground beef, so guests can feel great about eating what they love.”

Rubio’s Impossible menu

Rubio’s features Impossible meat on several plant-based dishes. Impossible seasoned ground meat made from plants will be served up in the following:

  • Impossible Taco Salad, which also comes with romaine lettuce, black beans, roasted corn, salsa fresca, tortilla strips, sliced avocado and pickled jalapeno ranch dressing, and the
  • Impossible Burrito Especial, which also comes with handmade guacamole, chipotle white sauce, roasted chipotle salsa, citrus rice, black beans, and salsa fresca in a warm flour tortilla, served with tortilla chips; and the
  • Impossible California Bowl, also prepared with citrus rice, handmade guacamole, black beans, romaine lettuce, salsa fresca, chipotle white sauce. Guests can choose to accompany it with a salsa verde or roasted chipotle salsa
