Noodles and Company debuts Cauliflower Gnocchi pasta line
Cauliflower Gnocchi Rosa, Cauliflower Gnocchi with Roasted Garlic Cream roll out system-wide
Noodles & Company added Cauliflower Gnocchi Rosa and Cauliflower Gnocchi with Roasted Garlic Cream, expanding its cauliflower-based noodle dishes. The new additions form a new category, as well. The move follows the successful implementation of spiral-shaped zucchini Zoodles and Cauliflower Noodles, at the Broomfield, Ohio-based fast casual.
With half the carb of conventional pasta, the expansion of the alternative-noodle menus is timely as many consumers seek out healthier choices to start the new year. In addition, the Cauliflower Gnocchi boasts a full flavored-profile and the texture of traditional gnocchi, according to a Noodles & Company statement. Both cauliflower-based Rosa Gnocchi and Gnocchi with Garlic Cream entrees feature spinach, zucchini and mushrooms and are topped with a sauce.
The new gnocchi recipe was two years in the making, noted Nick Graff, executive chef and vice president of culinary at Noodles & Company.
Guests are sure to embrace the move by Noodles & Company to expand lower-carb options, building on previous initiatives, like Zoodles, its cauliflower-infused rigatoni, and Caulifloodles. It also makes it easier for the chain to compete against fast casuals that promote lower-carb, higher-protein meals, including Protein Bar; and those with lifestyle-based entrees, including Chipotle.
Graff added, “Gnocchi is a classic Italian pasta that I have long enjoyed, and we’ve elevated it from a dish that most people view as an occasional indulgence and transformed it into a healthy and flavorful option that our guests will feel good about eating any day.”
