7-Eleven Evolution Store with Laredo Taco taqueria unveiled in Prosper, Texas

New Prosper location also offers Wine Cellar, Beer Cooler, expansive on-trend beverage offerings

7-Eleven opened a new Evolution Store in Prosper Texas with a Laredo Taco Company taqueria. The store features a diverse array of treats and conveniences, including tacos, frozen margaritas on tap, a stocked Wine Cellar and Beer Cooler, baked goods, and customized espresso drinks. The concept-store expansion continues in 2021, after 7-Eleven Evolution Stores opened in New York City, Washington, DC, San Diego, and Dallas last year.

“Evolution Stores and Laredo Taco Company taquerias have been game-changers for 7-Eleven, and we will continue to test and iterate to incorporate learnings into new and existing 7-Eleven stores across the system,” said Chris Tanco, 7-Eleven executive vice president and chief operating officer. “We can’t wait to see this location’s new patio concept become a fun gathering place for Prosper residents.”

Prosper Evolution Store offerings

Each new concept store is slightly different as the company adjusts product mix, services and features to the particulars of the market. The Prosper 7-Eleven Evolution Store features a Laredo Taco Company taqueria. In addition, it will offer self-serve specialty espresso coffee beverages, novelty drinks on tap, an assortment of baked goods, national brand skincare and makeup items. Plus, the Wine Cellar and Beer Cooler will offer Prosper residents and visitors a wide assortment of wine and beer.

Like other Evolution Stores, the Prosper 7-Eleven provides a mix of beverages that are on trend. Artisan craft sodas, with flavors such as ginger beer, black cherry, pineapple coconut, diet key lime and diet cherry vanilla, are available. There are also sparkling and still water flavors, like lemon ginger, strawberry rose, coconut lime, cucumber mint and mango.

Blurred line between foodservice, convenience

7-Eleven executives continue to leverage the acquisition of the Laredo Taco Company restaurants and Stripes convenience stores in South Texas from Sunoco in 2018, as they evolve their convenience-store model for the future.

The opening in Prosper comes on the heels of a concept store unveiling in March in Dallas, Texas, with the first-ever Laredo Taco Company drive-thru restaurant. In addition to a drive-thru, that store offered indoor seating, as well.
