Arizona’s Koibito Poké chain to expand into North Carolina

New store to mark first East Coast Koibito location

Koibito Poké will expand its franchise with a new store in Charlotte, N.C. at 4701 Park Road. The new location’s opening in July will mark the first store outside Arizona. Franchisee Adam Daniel will own and operate the inaugural East Coast unit.

The restaurant will span 1,469 square feet with indoor and outdoor seating. With this space, the Charlotte Koibito Poké has seating for 30 guests inside and out.

On the menu, guests will find Signature Bowls, like the Chicken & Shrimp and Tuna Trio. Additionally, the open format of the Charlotte Koibito Poké lends itself well for guests to read the menu and view ingredients. Aside from Signature Bowls, orders can be customized by guests from a selection of seafood proteins, toppings, such as seaweed salad and cucumber salad, and nine unique sauces.

True Capital Partners LLC began backing Koibito Poké as it expanded beyond the Metro-Phoenix area. Notably, they have now mapped out expansion of the franchise to 300 units. Also, Koibito executives expect the first 120 stores to open within 24 to 30 months.
