Noodles and Company tests Asian Broth Bowls, launches LEANguini nationwide

Japanese Chicken Broth Bowl, Sesame Chicken Dumpling Broth Bowl and Vietnamese Steak Broth Bowl in test

Noodles and Company launched LEANguini nationwide while it deployed a pilot to test new Asian-inspired, Broth Bowls. The three broth-based bowls include Japanese Chicken Broth Bowl, Sesame Chicken Dumpling Broth Bowl and Vietnamese Steak Broth Bowl.

“Menu innovation has been at the core of who we are at Noodles—we are always looking for new ways to present our guests with exciting new flavor profiles made from premium fresh ingredients,” said Nick Graff, executive chef and vice president of culinary at Noodles and Company.

Noodles broth-bowls test

  • Japanese Chicken Broth Bowl features a creamy ramen pork broth with lo mein noodles and grilled chicken, carrots, napa and red cabbage, topped with green onions.
  • Sesame Chicken Dumpling Broth Bowl provides a soul-warming chicken sesame-infused broth with chicken dumplings, lo mein noodles, carrots, napa and red cabbage, topped with green onions.
  • The Vietnamese Steak Broth Bowl includes traditional pho-style beef broth with rice noodles and steak, spinach, napa and red cabbage, then topped with green onions and cilantro.

Graff added, “We were inspired by the comforting taste and unique flavors of Asian cuisine to create our new broth bowls, and with guests already showing such affinity for the Asian options on our menu, the new broth bowls round out our beloved Asian options.”

Currently, Noodles does offer Asian flavors in its Japanese Pan Noodles and Pad Thai. More recently, these additions have expanded the line: Grilled Orange Chicken Lo Mein and Spicy Korean Beef Noodle. Meanwhile, the efforts of Noodles’ culinary team with Asia Broth Bowls will pave the way for additional menu variety and innovation.


National LEANguini rollout

Noodles’ national rollout of LEANguini follows a successful test. Now available at stores systemwide, Noodles & Company created the fast casual’s first-of-its-kind noodle in-house. With a comparable taste to regular pasta, according to the noodle chain, it has 56% fewer net carbs and 44% more protein than traditional wheat pasta noodles.

With summer around the corner, Noodles will feature LEANguini Lemon Parmesan, a light and citrusy pasta dish. The pairing combines LEANguini noodles with a lemon parmesan sauce, roasted zucchini, Roma tomatoes, and spinach, garnished with parmesan and parsley. What’s more, customers can replace the pasta on any dish with new LEANguini for $1 as they personalize their meal. However, substitution charges may vary across the system, according to a statement.

“As we’ve innovated our menu over the past few years bringing forward more health-focused options and balanced dishes, we’ve seen more and more guests change their eating habits and try our healthier menu options,” said Stacey Pool, chief marketing officer at Noodles and Company. “With the versatility of LEANguini and how well it complements every dish on our menu, we anticipate many guests will transition to this noodle because its taste, texture, and nutritional composition is unlike any other noodle available anywhere.”
